This rye was crafted by Dave Pickerell, who was previously the Master Distiller as Maker’s Mark in Loretto, Kentucky.
Following distillation, the rye whiskey is matured in traditional oak casks before being double-barreled, or finished, in secondary casks. The secondary casks are composed of American oak and have been charred with a #4 char. In addition, the staves of the secondary casks were air-seasoned for over two years prior to the casks’ assembly. As a result, the secondary casks contribute strong notes of vanilla and caramelized wood sugars to the rye, while minimizing bitter tannins that are often present in kiln dried oak.

Hillrock Estate Double Cask Rye Whiskey is a Pickerell handcrafted from small organically grown rye harvested from Hillrock Estate. After harvest, the rye is crushed and fermented in Pickerell’s custom-made 250-gallon copper still before distillation. Built to Pickerell’s exacting specifications in Kentucky, the still gives the distiller exceptional control over the character and quality of the whiskey being produced.
After distillation, rye whiskey is aged in traditional oak casks before being double cask or finished in secondary casks. The secondary barrels consist of American oak and are charred with number 4 charcoal. In addition, the secondary barrel staves were air-spun for over two years before the barrels were assembled. As a result, the secondary barrels bring strong vanilla and caramelized wood sugar to the rye and minimize the bitter tannins often found in dried oak.
Double Cask Rye has a deep golden amber color with warm vanilla and caramel aromas complemented by notes of plum, apricot and rye. The aroma gives way to notes of caramel and rye, as well as notes of cloves, cinnamon and sandwich, resulting in a long and warm finish.

In the early 1800s, New York State was responsible for more than half of the barley and rye harvested in the United States. Stretching north from New York through Albany, the Hudson Valley was the nation’s original breadbasket, home to thousands of farms, hundreds of which distilled their harvested surplus grain into whiskey. In the 1930s, the onset of Prohibition forced these farmers to abandon their static designs.
Today, master distiller Dave Pickerell pays tribute to the New York farmers who made their whiskey from grain to glass in a 19th century Georgian mansion in the heart of the Hudson Valley. Pickerell, who graduated from West Point with a bachelor’s degree in chemistry, served 11 years in the Army as a cavalry officer before earning a master’s degree in chemical engineering from the University of Louisville..
